Quinoa salad recipe for great focus and more energy!

The summer took a big step and we are all thinking about where to go for a holiday. White sand beaches, blue sea, and sweet Pina Coladas are a “must-have” this summer. As every summer. We are excited, full of energy, counting the days till our vacation! But nothing affects our confidence more than the fact that our body doesn’t look great as we expected. Right? I think that it’s never too late to get into the shape! I’m quite sure that you can lose one to two pounds in 2-3 days by taking raw fruits and vegetables. This quinoa salad recipe is one of the meals full of nutritious substances. Also, it will feed your appetite and help you lose a few extra pounds. Awesome!

Salad is a perfect combination of proteins and carbs

“Quinoa”, “salad” – don’t you feel already healthy by just reading these two words!? In my opinion, salad can be a complete meal if you balance all the ingredients in it.

Quinoa is generally considered a grain because it gets prepared in the same way and has the same nutritional values. However, did you know that quinoa actually belongs to the family of grasses?

There are many types of quinoa: white, black and red. White is most spread on the market, while black has the highest amount of antioxidants. I used the organic quinoa from the Agrofino brand in preparation for the following quinoa salad recipe. Let’s jump onto it!

Ingredients (For two people):

50 g black Organic quinoa

200 g cherry tomatoes,

1 yellow bell pepper,

1 medium cucumber or zucchini,

lettuce,

30 grams of walnuts,

2 tbsp olive oil,

1/2 tsp turmeric,

salt and pepper.

Preparation:

  • Wash quinoa under a jet of cold water, then pour a few glasses of water. Place it to boil at the strongest temperature, then lower down it after it starts boiling. Cook for about 15 – 20 minutes or until you see white rings coming out on the top of the water. Transfer to the strainer while preparing the other ingredients.
  • Cut the cucumber or zucchini, tomatoes, and pepper in the shape you want. I like to cut vegetables into very small pieces because I’m wearing braces and my ability to chew has been decreased. You know the struggle. Place all the vegetables into a larger bowl, than add ready quinoa.
  • Quinoa salad dressing you will prepare by mixing in a separate bowl two tbsp olive oil, little bit lemon, 1/2 tsp Curcuma spice, a pinch of salt and pepper.

Mix all the ingredients. Decorate everything with some crunchy walnuts and voila – you have a perfect quinoa salad for these summer days!

Quinoa salad – nutritional value

While making some healthy meals, do you google to see what are the nutrition value of the ingredients you are using? I do not know about you, but I always do it! Besides the fact that I bring healthy products into my body, I like to read how certain foods improve my health.

Well, quinoa contains large amounts of vitamin E and vitamins from the B complex. As we know, these vitamins are very important for the perfect look of our hair, nail, face! There is a lot of calcium, potassium, magnesium, zinc. Quinoa is very good for the maintenance of the cardiovascular system functioning because of the high content of monounsaturated acids.

On the other side, walnuts are considered one of the oldest nutritious foods because they grew as a wild plant in the form of walnut forests. His exact origin is unknown, but it is thought to originate from Asia, and from there spread through the Mediterranean all over the world. There are some fun facts!

There have always been contradictory thoughts about this beneficial fruit, in certain mythologies, it is completely degraded, while other cultures considered it as a sacred fruit. However, until the modern age, he remained as part of the ritual, most often as a symbol of fertility (more fun facts)!

The antioxidants present in walnuts are of better quality compared to those found in other bone fruits and therefore are more effective in preventing damage to the cells of the organism. In this way, they are also official health protectors in the fight against cancer.
