“The greatest wealth is health.” ~Virgil.
I’ve placed unusual salad recipes on the throne. They are perfect for gourmets who like their meal to turn into a sensation of flavours! There you go – an idea for an office lunch! All these salad recipes in unusual ways combine vegetables, fruits, chicken and, of course, the indispensable cheese – which create a perfect delicacy.
Power Salad – a salad recipe for more energy and good focus
Recently, I tend to like Asian cuisine and a combination of sweet, spicy and salty that explodes in the mouth! This unusual salad recipe is a representative example of it.
- 200 g tofu cheese,
- kale, spinach, Rocca salad (50 g each)
- 50 q quinoa,
- 30 cashews
- 100 g cherry tomatoes,
- 2-3 fresh strawberries,
- miso-ginger-sesame dressing.
a) Firstly, you need to make q crispy tofu. Remove the tofu from the package, marinate into soya sauce, garlic powder, lemon juice and maple syrup. Toss the tofu into cornstarch and fry it into a pan with little oil. Let it cool.
b) Put the quinoa in the pot and pour water. Let it boil. The most important part about cooking quinoa is to remove it from the pot as soon as it’s cooked through. The longer you leave it in a pot the stickier it becomes. Once all the water was absorbed immediately remove it from the stove or instant pot, dump into a bowl and fluff with a fork. Let it chill.
c) To soften the cashews just soak into hot, not boiled water and leave it at least 30 min. If you like the crispiness of the nuts you can use it as it is.
d) Cut the kale, spinach, Rocca leaves and cherry tomatoes into larger pieces and place in a medium bowl. Sprinkle some salt, pepper, little bit of oil (optional). Then add tofu, cooked quinoa and mix well. To make your salad pretty add cashews and 2-3 cut strawberries on the top. Pour the miso-garlic dressing and enjoy this unordinary salad recipe!
Palm hearth salad – this salad recipe will delight you
You will need:
- 200 g chicken
- 100 g palm hearts (canned)
- 50 g cucumber
- 50 g Roca salad (replacement can be lettuce),
- 50 g cabbage,
- 20 g parsley.
- Salt, pepper, olive oil, lemon juice.
a) Marinate 200 grams of chicken breasts in a lemon juice sauce, spices, garlic powder and let it sit for about 20 minutes. You can prepare in advance and leave it in the refrigerator. It’s very important chicken to absorb the marinade in order to be tastier. Put in a foiled baking pan and put it in the oven for the next 30 minutes. Take it out of the oven and when it is chilled, cut into thin parts.
b) Take out the palm heart from the can, and cut it into round parts.
c) Chop the salad, cucumber, cabbage and parsley in thinner parts so that it will be easier to absorb the sauce.
d) Now its time to prepare the garlic sauce. Pour around 100 ml water into a saucepan, and bring to a boil over medium heat. Add the garlic and garlic powder, and boil until the water has almost evaporated. Stir in the heavy cream, parsley, salt, and pepper. Mix the cornstarch with the remaining water, and stir into the sauce. Cook, stirring constantly, until thickened, about 3 minutes.
e) Place all green veggies into a medium bow. Add half of the sauce to the veggies and mix well. This way ingredients will better absorb the sauce. Add the chicken on the top and palm hearts. Sprinkle from above the sauce and the salad is ready to eat. This unusual salad recipe will delight your palate with its combination of taste and simplicity!

Mexican Salad – Ay caramba!
Chimichanga and tequila, enchilada, quesadilla… it’s enough to just say these words out loud so that you feel like playing mariachi music! But, since we are talking about salad recipes this time, it’s time to mention one another very famous, yet unusual salad recipe – a Mexican Salad. Caramba!
- 200 grams red beans,
- 100 g corn
- 1 red pepper, 1 green pepper,
- one big carrot,
- a bigger tomato,
- Tabasco sauce, 1 onion, spring onions.
How to prepare:
a) The recipe itself is very easy if you use canned red beans which you need to rinse with clean water. If you use dry red beans, then you need to soak it in hot water for some time and then boil it for around 2 hours in order to soften. Thus, use canned ones. Makes life easy!
b) Same is with the corn. You can buy corn in a can, however, if you still prefer a healthier version buy fresh or frozen corn. You just need to rinse with hot water and boil it for around 30 minutes. Put the chopped carrot into the same water and boil till gets soft to accelerate the process.
c) Cut the pepper, onion, 1 spring onion, tomato into very small pieces an place it into a medium bowl. Add the beans, corn and carrot which you firstly spiced up with Tabasco sauce. It’s time to mix everything together. Add some salt, pepper and pinch of oregano.
Time to spice the things up!
Mexican salad must be at least little bit spicy as per the original right Mexican salad recipe so feel free to add more Tabasco. After mixing everything well put the salad in the refrigerator for at least 20 minutes. When the salad is finely chilled, it’s time to eat! Ay caramba! Amazing, right?
Mexican food is often wrongly considered unhealthy. Such a reputation is mainly achieved thanks to numerous fast food stands, where original recipes are added to processed cheese, sour cream or similar dairy products, and dishes simplify and lose their authenticity.
